Last time we were in Mexico, my friend JorgeFitz called and said: I want Regis and you to come to DF and spend a weekend at our casa in La Roma neighborhood (their casa dates back from 1913!), he also added they (he & his hubby Alberto) were “slowly cooking” something very special and they wanted us to try and test that super secret project.
A day spent with Quentin Bailly, Pastry Chef and Champion du Monde 2013, is a well spent one. In between ganaches, mirlintons, biscuits and fond de tarts, I photographed this young (he’s just 30!) but talented Masterchef and watched how he shares his magical wisdom; also known as technique of the art of pastry making.
When my husband first told me about the proposition he received to work in Marrakech, my mind started to dream about all the exotic ideas and clichés we all growth with about this magnificent area.
