Recipe // Flourless Chocolate Peanut Butter Cookies
This is the type of recipe that you bake precisely on the day previous to your Bali trip because you just cant help it. What the hell the diet and that tiny bikini. You want and deserve cookies.
The same type of recipe that you don´t mind to spend your precious time in food styling, photographing and writing down a decent (according to you) blog post even if that means arrive to your dreamy destination on sleep deprived mode. The very same recipe/post that you schedule to be published once you arrive to paradise just to discover that instead of scheduling it, you humm, deleted it…
In short this is the best recipe you will find (or at least I did) of Peanut Butter Chocolate Chip Cookies sans farine.
And that, oh yes, deserves and pays all the efforts you make once you devour one freshly baked cookie.
Oh, and best part ever: it involves just one bowl to mix all the ingredients
Flour-less Peanut Butter Chocolate Chip Cookies as seen in Epicurious
yield 2 dozens
1 cup creamy peanut butter
3/4 cup brown sugar
1 large egg
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
1/4 teaspoon fleur de sel
1 cup dark chocolate chips
Preheat oven to 350F/176 C
Mix first 6 ingredients in a medium bowl
Mix in chocolate chips
Using moistened hands or a small ice cream scoop form (or scoop) the dough into balls.
Arrange on 2 greased baking sheets spacing them by 2 inches.
With moistened fingers flatten the balls just slightly.
Bake cookies until puffed, golden on bottom and still soft to touch in center, about 10 to 12 minutes.
Cool on the baking sheets for 5 minutes and after this time transfer to racks, cool completely
Note: these cookies are more crumbly and softy-ish than usual (remember no flour!) so if after a day or so the cokies have become too soft you can always reheat them for 5 minutes in the oven.
